- Take ½ cup of white sugar and 1 pint of blackberries
- Heat them together until they started to melt and bubble, about five minutes on medium-high heat stirring briskly
- Then setting it aside
- Take some beautiful large bay scallops about one pound and covered them in four tablespoons of olive oil
- Then with two teaspoons of Chicken Seasoning and sprinkle over them and mix it thoroughly
- Place the scallops on a high heated grill, sear on both sides about two to three minutes
- Plate them and spoon the blackberry sauce over them
